No Crumbs Left Summer Seafood Corn Chowder Review
A Summer seafood corn chowder that you can whip up easily for dinner? Sign us up. Corn is everywhere during the Summer months and there are so many ways to use it. People love making grilled corn and I’m a fan of that too. I also love soups because they are perfect for meal prepping. We can get several meals from one pot and that comes in extremely handy when we’re busy.
I made this soup on a busy Thursday. I decided to chop everything using my new food processor. My old processor was gifted to us at our wedding almost 17 years ago so I felt like it was time to treat myself with a new one. Whoever gave that original processor to us should know we got their money’s worth.
I made the soup exactly as she instructs. I didn’t use the unsweetened butter because I forgot to toss it in. This is what happens when you have to stop cooking midway to take your daughter to buy a violin. We attended her first orchestra meeting before returning home to finish the seafood corn chowder.
This summer seafood corn chowder came out better than I expected. The flavors were light and clean. It was like a tummy filling palette cleanser. I don’t think I’ve ever had corn chowder with shrimp before. It will certainly be a must for me from now on. The broth carries the flavor of the vermouth very well.
Top each bowl with crumbled bacon (I save bacon from breakfast) and chives and you’ll have a very good lunch in front of you.
I needed to free up space in my fridge so I put the rest of my soup in my Souper Cubes. Freezing the soup and having it for lunch for the rest of the week will help me out so much.
