The Southern Girl Salad
Good things happen when you talk to your girlfriends about your meal plan. Delicious things. This peach and grilled chicken salad was created during a conversation with a friend. We put together a few salads based on her preferences and some things she already had at home. We both agreed that these flavors would be magic together and we were not wrong. If you love a good sweet and salty salad this one is for you and all of the southern (and Cali) girls that have access to good peaches.
The best part of this salad is how the bacon and peaches come together. That sweet and salty flavor hits. The feta cheese does its job to provide that extra flavor along with the juicy cubes of chicken. The radish gives an earthy neutral taste that keeps things from going left. I have never been so impressed with a salad in all my days of salad eating. (and I have many salad eating days above my belt)
For the dressing, I combined a little Greek vinaigrette with a little creamy poppyseed. I literally ate this until I ran out of all the ingredients. It was that good. Feel free to swap out the ingredients based on your own preferences. You can’t go wrong as long as you keep the peaches with at least one salty component.

You’ll have someone you trust to get recipes from and you both can share how you feel about anything new you’ve tried. We might be good cooks when people stay out of our kitchen but we are better meal planners when we meal plan together.
